I just have to say I LOVE cooking in a crockpot. Whenever I get the chance I use it, just makes life a whole lot easier!
Funny story…or maybe not so funny…a few days after I cooked and shot this meal, my crockpot fell in my laundry room and broke. Its a sad sad day when you lose one of your favorite cooking vessels…
Anyways, lucky thing I was able to capture this recipe beforehand. Super simple & healthy dinner to make at least one night of the week a little easier for you! This made for 6-8 healthy sized tacos! Plus the corn salsa makes extra so you can enjoy some with a few tortilla chips while you wait or even the next day as a snack.
Start off by placing your chicken breasts in crockpot.
Next, mix up the seasoning in a small bowl. This adds a little extra kick & flavor.
Sprinkle evenly over all sides of chicken.
Pour over your choice of salsa. Now I chose to cook mine on high which means it was done in a quick 2 hours. You can cook yours on low and depending on how much chicken you have in there will depend on how long it will take.
While this is cooking, now is the time to chop and mix up the corn salsa ingredients.
Once you are done with the salsa place it in refrigerator to allow flavors to meld together.
You can cut into chicken and check coloring, but it will shred and fall apart when done. I also chose for a creamier style taco and added a little greek yogurt which is a healthier choice over the usual cream cheese.
And now its time to eat! Place some chicken into your tortilla, top with salsa, a squeeze of lime and a little extra cilantro! Enjoy!
- 2 chicken breasts-1b
- 1 jar of salsa- I made sure it had no added sugar or odd ingredients.
- ¼-1/2 cup greek yogurt
- Flour tortillas
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp oregano
- ½ tsp cumin
- ¼ paprika
- ¼ red pepper flakes
- 14 tsp salt
- ¼ tsp pepper
- Place chicken into crockpot.
- Mix seasoning and sprinkle on all sides of chicken.
- Pour salsa over top and place lid on crockpot, turn to low and cook 2 hours.
- Check chicken by slicing into and making sure no pink remains. Chicken should shred apart easily.
- Add in greek yogurt.
- 1 can sweet corn, drained
- 1 can black beans, drained and rinsed
- ½ red onion chopped
- 1 jalapeno chopped
- ¼ cup chopped cilantro
- ¼-1/2 tsp salt
- Juice of 1 lime
- 1 avocado chopped
- Mix all ingredients except avocado.
- Once all ingredients are mixed then add avocado.
