Let me start by saying, I can’t believe I have never made these because they are so dang good!! The crisp layer on top and chewy inside…yum!
I’ve baked almost everyday this week. Trying new recipes and creating some fun combos. These cookies are a traditional Christmas cookie that I will definitely be making every year!
- 1½c self rising flour
- 1½c sugar
- ¾c butter, melted
- ¾c Cocoa powder
- 3 eggs
- ½tsp almond extract
- 1tsp heaping, instant coffee granules
- 1c semi sweet choc chips
- For Rolling:
- ¾c powdered sugar(or more for outside)
- ½c granulated sugar(or more for outside)
- Mix flour and sugar in large bowl, set aside. Melt butter in another small bowl and let cool. In another small bowl whisk eggs and almond extract. Once butter has cooled stir in cocoa and instant coffee. Add egg mixture to this and stir together. Add this to flour and mix well with wooden spoon. It will seem thick but it will all come together. Stir in chocolate chips. Refrigerate for at least 30 minutes. After refrigerating, lay sugar and powdered sugar on separate plates for rolling. Scoop 1in balls and roll in granulated sugar first then in powdered sugar. Coat well. Bake at 350 for 12-15 minutes. Enjoy!
