{SKINNY} Protein Packed Granola

Well since it’s National Cereal Day, I thought I would share a healthy alternative with you. It’s protein packed granola and it’s delicious! You can eat this with your choice of milk, yogurt or just plain!

I have recently started using this PB2 peanut butter powder and I am really enjoying it! You can now find it at most local grocery stores near the regular peanut butter. All you have to do is mix it with water to make it creamy or you can add the powder to your smoothies, shakes, and even when cooking if you want a nutty flavor without all the added fat and calories peanuts can give you.

I am all about comfort food, so when it comes to greasy hash browns (that I shouldn’t be eating) I like to find an alternative that makes me still feel like I’m eating somewhat the same thing (kinda)! Meal Prep {Clean} Turkey Burgers

Clean Turkey Burgers

These Meal Prep {Clean} Turkey Burgers are super filling & easy to make. Anyone can do it! Adding different ingredients every time keeps things interesting, I kinda work with what I’ve got in the fridge. As long as they form a patty you should be fine, just make sure there’s enough flavor, onions help that area out a lot!

This time I started with chopping up some onion, green onion, shredding carrots, chopping half an Anaheim pepper.

First I sautéed the white onion & pepper in a pan with a little olive oil & minced garlic. Long enough until the onions are turning translucent.

In a bowl I added a lb of ground turkey, the shredded carrot, green onions, salt, pepper & red pepper flakes. Mix that around.

Once onions and peppers are done add them to the ground turkey mixture, combine and cut into 4 quarters.

Spray pan with olive oil spray and form 4 patties. Cook 10 min on each side until fully cooked through.

When you add so many fun ingredients you don’t even need a bun! A lot of times I make these and eat them with a side of veggies and it gives me a super healthy lunch or dinner without the added carbs!

A dish I love having as part of  meal prep for the week, you can double it if need be, this will last me for 4 lunches for myself since I’m usually the only one home during that time its perfect! And makes the day just that much easier!

Ingredients:

  • 1/4-1/2 cup white onion diced
  • 1/2 anaheim pepper diced
  • 1 tsp garlic minced
  • 1 TBS extra virgin olive oil
  • 1 lb ground turkey
  • 1 carrot finely shredded
  • 1/4 cup green onion chopped
  • 1/2 tsp salt himilayan
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flake

Instructions:

  1. Add diced white onion, anaheim pepper, minced garlic and olive oil to a pan.
  2. Sautee until onions are translucent.
  3. In a bowl add ground turkey, carrot, green onion, salt, pepper, & red pepper flakes and mix together.
  4. When onion mixture is done add that to ground turkey mixture. Mix until well combined.
  5. Divide into 4 patties and over medium heat, spray pan with olive oil spray and add patties.
  6. Cook 10 min on each side until fully cooked through. Enjoy with or without a bun!

2016 Healthy Solutions Spice Blends Recipe Challenge

Turkey Lovers Meatloaf

I have a super healthy and easy recipe for you today. I got the chance to compete in this awesome blogger contest using Healthy Solutions Spice Blends. I chose to use their Savory Meatloaf Blend and made a killer meatloaf! With the theme of “low salt/low sugar” and “blending healthy with great taste” this was a lot of fun to come up with one of my families favorite dinners and making it healthier for all of us. Plus its wrapped in turkey bacon…can’t go wrong there!

You guys should really check out these amazing spice blends here. They have a large variety for you to choose from. Its nice to see healthy choices to use on all your favorite meals! They will also have my video along with the other contestants uploaded onto their YouTube channel so you can have a visual of how this is created. I just really enjoyed serving the meatloaf with a gravy rather than topping it with the usual ketchup, now you are more than welcome to do that, but I have a yummy gravy for you if you are feeling frisky! I served mine with sweet potatoes to keep the theme of “healthy” but feel free to serve with your choice of side. Enjoy folks!!

Turkey Lovers Meatloaf

Cook time:  45 mins
Total time:  1 hour 5 mins
Serves: 6-8 servings
 
Ingredients
  • Meatloaf
  • 2 lbs ground turkey
  • 2 celery stalks, diced
  • ½ white onion, diced
  • 2 carrots, grated
  • 1 cup old fashioned oats
  • 1 TBS Worcestershire
  • 2 large eggs
  • ½ cup water
  • 1 pkg Healthy Solutions “Savory Meatloaf” Spice Blends
  • 8-10 slices turkey bacon
  • Brown Butter Mushroom Gravy
  • ½ cup unsalted butter
  • 1 cup mushrooms
  • ½ tsp rubbed sage
  • 1 tsp minced garlic
  • 2 cups unsalted beef stock
  • 2 TBS flour
  • Pureed Sweet Potatoes(optional)
  • 4 large sweet potatoes, peeled and chopped
  • 4 TBS unsalted butter, melted
  • 1 tsp garlic powder
  • ½ tsp paprika
Instructions
  1. For the meatloaf: Pre-heat oven to 375. In a large bowl combine all ingredients except for the turkey bacon. Mix well. Dump onto a sheet pan lined with foil and form into 8-10 inch loaf. Cover top with turkey bacon making sure to tuck edges underneath. Bake 45-60 minutes.
  2. For the gravy: While meatloaf is baking, prepare gravy. Melt butter and simmer until browned, about 5-8 minutes. Add in mushrooms, sage and garlic. Stir to combine. Add in beef stock, simmer 8-10 minutes or until mushrooms are soft. Add flour 1 TBS at a time, whisking until thick.
  3. For the sweet potatoes: While meatloaf is baking, boil sweet potatoes until fork tender. Place in food processor, puree while adding in melted butter, garlic and paprika.

Flu Fighter Chicken Noodle Soup

It is snowing like crazy out here in Middle Tennessee, they say anywhere from 3-9inches, the most they have seen since 2003! The kids are loving it and honestly so are we! Cold weather always means its time to get out the crockpot and start making some delicious, healthy and easy meals. Cold weather also means flu season. Yuck! Except my crockpot broke….sooooo i still made it as easy as possible and this can all be made in one pot in about an hour!!

I am here to help anyway I can with that, so for today I’ve got a yummy chicken noodle soup with some extra flavors to help ward off those nasty colds. One secret ingredient that you may find a bit unusual but it has so many health benefits and also give some extra flavor!

I just have to say I LOVE cooking in a crockpot. Whenever I get the chance I use it, just makes life a whole lot easier!

Funny story…or maybe not so funny…a few days after I cooked and shot this meal, my crockpot fell in my laundry room and broke. Its a sad sad day when you lose one of your favorite cooking vessels…

Anyways, lucky thing I was able to capture this recipe beforehand. Super simple & healthy dinner to make at least one night of the week a little easier for you! This made for 6-8 healthy sized tacos! Plus the corn salsa makes extra so you can enjoy some with a few tortilla chips while you wait or even the next day as a snack.

FLOURLESS Peanut Butter Chocolate Brownies

With the month of December filled with family and friends and LOTS of bad eating, I am excited to start eating healthier starting off by changing the way I bake! Now I will still throw in those mouth watering, full of fat and sugar posts, but for now I need to take it down a notch.

I have made flourless goodies before, not saying they always taste good, but I have definitely made them haha! This one has a secret ingredient. You might think yes I know what it is…Black Beans! Nope, wrong! Something else that I have been learning about that can be used as a four replacement as well. Chickpeas! And they still actually taste great!! Also, instead of the normal processed sugar, I used sucanat, which is a lot like a healthy brown sugar. Very delicious and a lot healthier for you. I also chose to use crunchy natural peanut butter, but it would honestly taste great with any type of nut butter.

So lets get this started! Oh I forgot to tell you….this is so dang easy, you just throw all the ingredients into a food processor and bang! Brownies made.

Since the New Year I have, like most of the world, been wanting to change my diet. Its really hard when you have little picky eaters, teenagers and hungry husbands. I have also been wanting to get serious about my blog and really start posting what YOU want to see & hear. So I came up with a survey to better understand my followers and so far the majority of you want healthier options. (If you haven’t taken the survey yet, please do so here) So it’s as if you are all forcing me to eat healthier! Haha, hey we can all use a little motivation here and there!

So last week I had bought some bananas thinking they would get eaten….well we were so busy that literally NONE of them were eaten! I didn’t want to waste them so I thought why not bake with them. Now when I think of healthy baking I think EWE! So let me just tell you, if I post something healthy, it will definitely taste good because I am super picky.

Today I have for you some super easy and healthy Peanut Butter Banana Muffins. Even better, with Chocolate Chips! Now I know chocolate isn’t necessarily healthy, I used semi-sweet, you can use dark or opt out completely if you’d like and they would still be delish!
