Brat Burger: Bud & Burgers Contest

April 29, 2015 by Darci Bos Leave a Comment

So yesterday I put up a picture of this amazing burger and figured I would let you in on this super easy recipe. The hubby and I came up with this burger for the Budweiser Bud & Burgers contest. I am hoping to get to go to a cook off, but honestly it all depends on what they are looking for, so we will see!

This burger is honestly so easy and you will feel like you are eating a restaurant quality burger from your own home! I have gotten back into entering contests again. There are a ton of fun ones coming up and I am hoping to place in at least one of them!

Brat Burger

We love brats in our house so when we were coming up with the perfect burger, we thought, what about making the patty out of brats? Not that it hasn’t been done, Johnsonville makes brat pattys, but its the combo of all the classic toppings and flavors we have added that makes this the perfect burger!

What Happened In Chicago?

November 16, 2014 by Darci Bos Leave a Comment

As I have said in a previous post, I had entered into America’s Baking and Sweets Show. My “Butterscotch-a-roo-Brownies” were chosen as a top 3 finalist. The grand prize winner would get $1000 worth of prizes, most of which I could have used; bakeware, wilton supplies, gift card for King Arthur, etc. The catch was you had to be there to claim your prize! So my sister-in-law Emily and I drove up to Schaumburg, IL, leaving at 3am so I could get there in time for the show at 1pm.

The show was more like a small convention. It was ok, not as big as I expected it to be, but the grand prize was still worth the drive, plus we would get to see Chicago!  There were 3 judges up on the stage, kind of like a show you would watch on the cooking channels on TV. Each category had 3 top finalist. The judges would taste each and would comment a little as they wrote down their scores. I was nervous sitting there wondering how they liked mine. One judge said “I shouldn’t like this one with the fritos, but I do!” Ahhh! That was mine! Except what was weird is as they brought them out and tasted I couldn’t tell which one was mine, and I should have been able to tell with it having chocolate covered fritos on top.

The time came when they announced the winners, I had no idea what to expect. “And the winner of the 2014 America’s Baking and Sweets Show Butterscotch Brownies competition is……” Not Me…..Oh well I thought, its a bummer, but I still got to come out here and experience this. So then they said “if you want to try all the finalists recipes we will be cutting them up and setting them out.” Well of course I had to try the others and also see what mine came out like. You see, we weren’t allowed to make them ourselves.

All the brownies were set out and I honestly couldn’t tell which was mine. So I tried them, one finally had a hint of fritos in it with a thin layer of chocolate on top. I was so irritated!!! I re-read my recipe and the only thing I could think of is I said “crush fritos to desired size” well they took that and literally obliterated them!!! The brownies were also over cooked. Although this is all very frustrating, it was a learning experience. Now I know my recipes have to be read by someone other than myself before submitting and be very detailed.

Needless to say I still had a great time with Emily! We got to eat deep dish pizza!

Also got to meet up with my moms long time friend who used to babysit me as a child! Ann Schultz Mathews, if you read this, we had a blast with you!!

We also drove into the city on our way out, which was beautiful!

2 cities in 1 week….Now its back to baking for me! Again thank you all for your support, it means so much to me!

The Today Show

November 13, 2014 by Darci Bos 1 Comment

Oat Stuffing

As my plane was landing in New York I was filled with all kinds of emotions. Excited, nervous, scared, happy, etc… I wished my family could be there. To be honest I have never traveled alone like that before without someone picking me up on the other side.

The Today Show had a black car service pick me up, I felt pretty special! My driver on the other hand wasn’t very talkative. The streets are filled with cars weaving in and out, side walks filled with people walking so fast like they are late for something. We pulled up to my hotel and immediately I was filled with anxiety. Just walking up to the door I felt like I had to merge into oncoming walking traffic. The front desk people weren’t very nice and all I saw were business suits, I felt out of place.

Now up in my room I wanted to explore the city, but for some reason I was scared and unsure. So I first decided to eat dinner in my hotel. Now this was nice! It was an enclosed patio overlooking Rockefeller Center. I was alone and it was very peaceful.

Now my nerves had calmed and I decided to go for a walk. So glad I did!

Everything was so pretty!

I could hardly sleep that night, just going over and over in my head what I would say and do. I mean this is national television we are talking about! Everyone was so nice at The Today Show. My fellow contestants and especially Joy Bauer. She was the sweetest! If you haven’t already you need to check out her website She’s all about health! My first time on TV, I felt awkward and shy, but still had fun and who knows, maybe will get to do it again!! Here are some pictures from the show!

Contests….

November 10, 2014 by Darci Bos 9 Comments

For those of you who don’t already know, I was selected as a top 3 finalist for my “Thank God For Oats Stuffing” recipe for Joy Bauer’s “Too Good To Be Healthy Contest” I will be on the Today Show this wednesday morning along with the two other contestants and the judges will try our dish and chose a winner! I am flying to New York for my very first time, this is so crazy!

I really can’t believe it.

I also got news yesterday that my Crunchy “Butterscotch-a-roo” Brownies are a top 3 finalist in a competition in Chicago this Friday. This is a really cool event. It’s called America’s Baking and Sweets Show. It is a huge convention at the Schaumburg Convention Center in Chicago. There were a bunch of categories and I entered into 4 and the one that got chosen was my Butterscotch Brownies! I get to see a professional chef bake up my brownie recipe and celebrity judges try them and pick a winner.

So, with all that said, I have a busy week ahead of me! Stay tuned to see if I end up winning anything, crossing my fingers!

Chipotle Buttermilk Biscuits

October 11, 2014 by Darci Bos Leave a Comment

You guys….these were so delicious! So in my Name That Ingredient game I had originally chosen Amaranth, but for some reason my town does not carry that sooooo I went ahead and chose another ingredient you suggested and I chose the Chipotle Peppers!! I will get back to Amaranth once I can find some.

I decided to go with a savory biscuit, and holy cow was this a right choice!! Thanks to my friend Becky Cook for suggesting this, we enjoyed them for dinner last night and they were so easy to make! Also tomorrow I will be doing another Name That Ingredient game, but I am changing it to SUGGESTION SUNDAY!! So please get involved…..

Chipotle Buttermilk Biscuits
Author: Bake & Style
Recipe type: Biscuits
Prep time:  15 mins
Cook time:  12 mins
Total time:  27 mins
Serves: 9

These are so soft and spicy and just delicious!
Ingredients
  • 1⅓c King Arthur Self-Rising Flour
  • ⅔c Yellow Corn Meal
  • ¼c cold butter
  • 2TBS Sugar
  • 2TBS (heaping) canned diced jalapeños
  • 4 whole chipotle peppers(from a can) chopped
  • ⅔ c cold buttermilk
Instructions
  1. Pre-heat oven to 400. Line or grease cookie sheet (I didn't need to so it depends on your pan you use) Combine flour, sugar and corn meal. Cut butter into smaller slices and break up into flour with hands until al the butter has broken into pea sized pieces. Stir in jalapeños and chipotle peppers.
  2. Stir in buttermilk a little at a time until dough is nice and soft and not too sticky. You can always add more buttermilk or use less, just depends on how well everything is coming together.
  3. Break dough up into biscuit sized pieces, mine made 9.
  4. Bake for 12-15min. My oven is really hot so it may take a little longer in yours, just start with 12min and keep an eye on them!
  5. I hope you enjoy these, they are spicy and soft and so yummy!
